Zesty Lime Marinade Elevates Shreds and Scrambles

We like to try all the “plant meat” products when we find them, plus we regularly make stuff like seitan or air-fried tofu. But often, we find ourselves wanting a little more “zip” to the taste. We love all that spices and herbs add to food, love savory flavors, and really enjoy recipes that give simple dishes that extra level of flavor. So, when we recently tried a plant-meat product that was pretty good we felt that it really needed something extra. Being bloggers, that sent us down a “side street” to figure out what might work really well – this Zesty Lime Marinade was the result.

If you’re a regular here at Full of Beans you know that we like to keep it simple and (usually) fast. Not surprisingly, then, this recipe is no different. Since the essentials of a marinade are acid and oil it was easy to get started. But, we also like spices and happen to have a lime tree in the backyard (#floridaliving) so the ingredients came together quickly: oil, lime, chili powder, red pepper, and garlic.

Whip This Together in No Time 

We love how easy this marinade is and how quickly it can be made. Seriously, it’s the sort of thing you can decide to use at the last minute (if you limes on hand) and really turn a dish from “fine” to “wow!” (and who doesn’t like doing that?). All that is required is zesting (before you juice!) and juicing the limes, crushing the garlic, and whisking all the ingredients together – that’s it!

Dishes That Zesty Lime Marinade is Perfect For

We’ve used this with all sorts of dishes. It’s been a strong player in tacos, whether you use store-bought shreds or jackfruit or make your own filling. But it is also wonderful with tofu crumbles or air-fried tofu. We have used the various fillings for tacos, wraps, sandwiches, in rice bowls, and as a spicy breakfast scramble – Tex-Mex style.

Zesty Lime Marinade

Description

Tangy marinade with a hint of spicy heat. Perfect for tofu, strips, mild plant meat shreds, or shredded jackfruit


Ingredients

Scale
  • 2 cloves garlic, crushed
  • Zest and juice of 2 limes (approximately 1/3 cup juice and 2T zest)
  • 1/2 tablespoon oil
  • 1 teaspoon chili powder
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon salt
  • few grinds of black pepper

Instructions

  1. Combine all ingredients into a bowl or jar
  2. whisk or shake until fully mixed

Notes

Tip: zest the limes before juicing!
