It’s Time for a No Fuss, Easy Granola Recipe

We love cereal in this house. That little just-before-bed bowl of cereal, the quick snack in the afternoon, or the delicious bowl with bananas and raisins (or the ultimate luxury of fresh strawberries or blueberries) – that’s me. But there are two problems: most cereals are expensive (particularly the whole-grain healthy-oriented ones we prefer), and granola recipes are usually fussy and time-consuming. That’s where this No Fuss, Easy Vegan Almond Maple Granola recipe comes in!

If you have an active life or a house full of growing (and always hungry) kids, there can be a need for healthy, but calorie-dense food. Whether your kids are rushing off to Saturday practice, you just got back from that long run on Sunday, or you’re planning a day-long family or solo hike: you need nutritious calorie-dense food that you can eat quickly to fill you up and give you needed energy. So a little goes a long way; as a matter of fact, that’s the point of us making it!

Easy Almond Maple Granola will Keep You Going

This easy granola also makes a great on-the-go snack. I know you’ve been there – those situations when you just need a little something, and you are struggling to find some vegan snack that’s worth eating. I’m sure you’ve stood in front of a vending machine, and the only vegan things available were Oreo cookies and Fritos. Both are tempting and delicious, but not necessarily packed with the nutrition that you want.

A small container of this easy granola in your car, purse, or backpack can be a lifesaver! You can even jazz it up with dried fruits like raisins, cranberries, cut-up dates, or even something unique like pieces of dried apricots.

Granola is great on-the-go, starting your day, or just anytime!

Make a giant batch of this delicious, no fuss, Easy Almond Maple Granola with two bowls, two cookie sheets, five minutes, and your oven! No more fussy granola!


Units Scale
  • 2 cups wheat flour (whole wheat, white or a combination) or gluten-free alternative*
  • 6 cups old fashioned rolled oats (not instant)
  • 1 cup unsweetened shredded coconut
  • 1 cup sliced almonds
  • 1/2 cup water
  • 1 cup sunflower or safflower oil
  • 1 cup maple syrup (any grade)
  • 2 tsp vanilla
  • 1 tsp sea salt


  1. Preheat oven to 250 degrees F
  2. Lightly grease 2 cookie sheets
  3. Combine first four ingredients well
  4. In a second bowl, whisk the remaining ingredients until well blended and add to the dry ingredients
  5. Mix thoroughly
  6. Spread evenly on the two cookie sheets and place on the center rack of your oven.
  7. Bake for 1 hour
  8. Cool thoroughly. Granola will become crunchy as it cools.
  9. Store in sealed container.


  • Dried fruit should be added when the granola is cool.
  • *My preferred gluten-free flour mix is 1 cup fine brown rice flour, 1/2 cup white rice flour, and 1/2 cup oat flour.
  • Oat flour can be purchased or made by putting oats in a dry blender or food processor.
  • A delicious, but a little more calorie-dense, option is to replace 1 cup of flour with almond flour/meal.
