Description

These vegan, gluten-free granola bars will be your go-to for a quick snack, a packed lunch, or a grab-and-go option when you’re rushing out the door in the morning. They’re bursting with flavor from cranberries, pecans, and chocolate, while the oats provide fiber to keep you satisfied and support gut health.


Ingredients

  • 3 cups gluten free old-fashioned oats
  • 2 cups unsweetened puffed rice cereal
  • 1 cup almond flour
  • 1/2 cup chopped pecans
  • 1/2 cup dried cranberries
  • 1/2 cup vegan miniature chocolate chips
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 cup gluten free brown rice syrup
  • 1/4 cup melted, refined coconut oil or vegan butter
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat the oven to 350 degrees. Grease a13x9 inch baking pan and line with parchment paper.
  2. Combine the first 9 ingredients in a large bowl.
  3. Whisk together the coconut oil, brown rice syrup and vanilla until well blended and pour over the dry ingredients
  4. Mix thoroughly and press firmly into the pan. It will be sticky. Using a spatula can be helpful to get a nice flat surface.
  5. Bake for 15 minutes or until edges are lightly browned.
  6. Cool completely before cutting with a sharp knife.

Notes

  1. The dried fruit and nuts can be substituted with any combination, based on preference.
  2. Check to make sure that your brown rice syrup is gluten free. Some brands have barley in them.
