Since becoming vegan, Greg and I are often asked what we eat for lunch. Meat has become such a primary player in even the simplist of meals and sandwiches for so many people that to eat without it is clearly daunting. It is curious to me that eating something that has to be conceived, raised, fed, slaughtered, transported and cooked before eating is perceived as less complicated than a plant based alternative, but that is the maddness of our modern world.

Back to lunch. We always have salad stuff and tons of fruit on hand, but often, especially in cooler weather, we want a warm food for lunch. When we make dinners, be it soups, stir frys, casseroles or pasta dishes, we always try and have left overs so we each have a serving to eat for lunch the next day. In addition, we often will have cooked rice and or potatos on hand. If you are making rice or potatos at dinner, it requires little effort to double quantities to have some to set aside.

Greg and I have been surprised at the frequency with which the topic come up so today when I was putting my lunch together, he asked me to write a blog about lunches. He and I were both working and I realized I was starving for lunch. No left overs on hand, but I did have some beautiful Jasmine rice. I thawed some organic broccoli, heated it with the rice and drizzled it with a little toasted sesame oil and a sprinkle of pepitas. It was a delicious, simple and satisfying lunch that was fast and very economical.

We have found that the best way to enjoy a whole foods plant based diet is to have things on hand to build meals around.

Beans and rice and potatoes can be elevated to something amazing and satisfying with a little creativity or a little research. Recipes are everywhere and the options are endless.
