Apple, Pear and Cranberry Crisp with Oatmeal and Pecan Topping

This Apple, Pear, and Cranberry Crisp with Oatmeal and Pecan topping is a delicious and satisfying melange of sweet, tart, rich, creamy, and crunchy. 

This is a wonderful vegan holiday dessert that brings together traditional (in our part of the world) Fall flavors and textures in a way that is sure to delight family and guests. This Apple, Pear, and Cranberry Crisp with Oatmeal and Pecan topping is easy to put together and makes for a wonderfully warm and rustic dessert. 

Leftover it is a bomb breakfast. Pie for breakfast happens in this house, and we highly recommend it!

Meals, and Dessert, Together = Love

This crisp is actually a variation of one that I have made for my family for years. I grew up in a house where we always had dessert after a family meal. Now, I know some people think desserts should only be for special occasions, but I can hardly think of a more special occasion than a family sitting down to share a meal together. This is especially true in a time when life just seems to only get busier. My advice: even if you can only pull it off a few nights a week, slow down and have a meal together. Then have dessert. 🙂

This Apple, Pear, and Cranberry Crisp was Inspired By…Leftovers!

This recipe came together in a way that many do in my house, either out of necessity or the inspiration of the moment. I grew up in a large family, so food was never wasted. That is a value I have held strongly for my adult life as well. So when I have odd bits of leftovers hanging around, the cooking wheels in my head start turning.

Here’s the moment of inspiration: there I was after Thanksgiving. Six apples left from pie-making. Two pears and cranberries leftover from the chutney. One cup of pecans left from the stuffing. Why not add the pears to make the right volume? Why not add some cranberries before they shrivel in the back of the fridge? How about adding the pecans to the topping?

Now that the wheels were turning in my head I turned on some music, pulled all the ingredients together, and baked it. I am not going to lie, we couldn’t believe how good it was! Only one forkful in Greg said: “write down what you did to make this!” (I wing a lot of dishes in my kitchen, so I have to be encouraged to pay attention and document some of them.)

Just seeing all that fruit you KNOW its going to be delicious!

A Vegan Holiday Dessert, But Don’t Wait For The Holidays!

I think you’ll really enjoy the delicious combination of flavor and texture in this Apple, Pear, and Cranberry Crisp. To be honest, I wanted to call this Happy Accident Crisp, but no one would ever find it in a Google search. 🙂 

A quick word about desserts: before you say anything, yes I do know how much vegan butter is in this. Remember that it sits on a pile of wonderful fruit and it is spread out over several servings. And it is dessert. Enjoy it and feel the love!

Description

Ingredients

  • 6 apples, cored and thinly sliced
  • 2 pears, cored and thinly sliced
  • 1 cup fresh cranberries
  • 1/2 cup vegan butter, melted
  • 1 cup oatmeal
  • 1/2 cup flour
  • 1 cup pecans, broken up a bit
  • 3/4 cup brown sugar
  • 1 rounded tsp cinnamon
  • 1/2 tsp salt

Instructions

  1. preheat oven to 375℉
  2. Combine oats, flour, brown sugar, cinnamon, salt, and pecans.
  3. Add the dry ingredients to the melted butter, mix thoroughly, and set aside.
  4. Combine the sliced fruit and cranberries and place them in a large pie plate or shallow baking dish. It will be a pretty large pile.
  5. Evenly distribute the topping over the fruit, gently patting it down with your hand or the back of a large spoon. I find that my hands work best. Don’t worry if there are a few pieces of fruit poking out.
  6. Bake in the center of the oven for 40 minutes, or until the top is golden.
  7. Serve warm.

Notes

I always use organic fruits, so I don’t peel the fruit. I like the rustic look and the taste and texture of the peels in the dish. Peeling the fruit is optional if you prefer it.

This dish is wonderful served warm with a scoop of vegan vanilla ice cream for dessert. Leftover with a little vegan yogurt, it makes a satisfying breakfast.
