If you enjoy creamy peanut butter and the kick of garlic and ginger, then these spicy sesame noodles are for you! Bonus: you can have this all made in almost the same time it takes to read this post!

Sometimes, Cravings are the Mother of Invention, too!

This is one of those dishes that just came to be from having a craving and looking around at what was available in the kitchen. We were thinking about a nice creamy taste with the “zing” of garlic and ginger (which are so good for you, too!). Plus something that would be easy to make, satisfying, and gluten-free. We had peanut butter on hand, some garlic in the basket on the counter, scallions and cilantro in the fridge, and a package of gluten-free rice pasta.

This is Sounding Like Spicy Sesame Noodles…

Once we started thinking about it, and how the tastes would work together, we gathered up the ingredients and got to work. Recently we had been intrigued by some hot sesame oil at the local Asian Market and bought some. This seemed to be the perfect time to take it out and give it a try – the heat would probably be the perfect complement! The next step was mixing it all up.

It’s Garlic, Peanut Butter, and Fast!

Once we figured it out, and made it a few times (and loved it!) we realized this about the spicy sesame noodles: it is a garlic lover’s dish for certain and also hits that peanut butter spot quite nicely. In addition, this recipe comes together super fast. As a matter of fact, you can make the sauce in about the time it takes for your pasta to cook. You can go from reading this post to ready-to-eat in about 15 minutes. Well, if you happen to have all the ingredients on hand, that is. 🙂

Speaking of having the ingredients on hand, this is a perfect example of why having long shelf life items on hand in your kitchen. Items such as a bottle of hot oil, peanut butter powder, sesame seeds, agave, and veggie stock. You can buy the linked items in that list on our Store, too!

Good Warm, Cold, Left-over, and It’s Portable

This dish is delicious no matter what. Because it doesn’t need to be refrigerated (or heated) its a great option for a brown bag lunch at work. It also works really well with gluten-free rice noodles. The oil and peanut butter helps with the tendency of many rice noodle brands to be a little sticky.

If these flavors are the kind that catch your attention, we are confident that you will like this recipe. To be honest, you might consider doubling it, because it goes really fast! All you need is a pot big enough for 2lbs of pasta. 🙂

If you enjoy creamy peanut butter and the kick of garlic and ginger, then these spicy sesame noodles are for you!


Ingredients

Units Scale
  • 2 Tbsp tamari
  • 2 cloves garlic, minced
  • 1/3 cup creamy peanut butter
  • 2 Tbsp PB Fit (optional)
  • 1/2 cup hot vegetable broth
  • 1 1/2 tsp rice vinegar
  • 1 1/2 tsp ground ginger
  • 1 tsp hot sesame oil
  • 2 Tbsp of sesame seeds, divided
  • 2 Tbsp agave syrup
  • 1/2 cup sliced scallions
  • 1/2 cup chopped fresh cilantro
  • 1 lb cooked spaghetti

Instructions

  1. Combine peanut butter and broth until well blended.
  2. add the remaining ingredients gently until well mixed
  3. add 1 tablespoon of sesame seeds, the scallions and cilantro – stirring until consistent
  4. Toss well with cooked pasta and sprinkle with remaining sesame seeds.

Notes

  • We add the PB Fit (affiliate link) because it enhances the peanut butter flavor with a little less fat. If you can’t find it in your area, or don’t have it on hand, it’s OK to omit.
