Vegan Burritos, A Quick & Crispy Treat

What’s For Dinner?

Here’s the scene: you get home, hungry, and you have no idea what to make. Everyone is looking at you and you say…”Let’s have vegan burritos!”

Hero time!

If you have a few things on hand (or time to stop quickly at the market) you can have delicious crispy vegan burritos in less than 30 minutes. It’s quick and easy and everyone will think you are amazing.

First of all, credit is due: this was inspired by an Instagram post of someone we follow – @somermccowan (her site is vegedout.com)

Vegan Burritos

It’s so easy all you really need are three ingredients:

  • refried beans (we have our own recipe)
  • tortillas
  • salsa
  • plus, anything else you want to add

If you can add guacamole, vegan cheese, and some avocado slices (like we did) or even chopped cilantro and vegan sour cream (Tofutti brand is excellent), you’ll be a quick vegan burrito gourmand and you can post it on Facebook. It’s a win-win!

For this post, making the vegan burritos, we used low fat refried beans (but we usually make our own) from Whole Foods, Daiya Mozzarella Shreds, an avocado, some salsa, guacamole, and flour tortillas. All available, in one form or another, at almost any grocery store. It made a low-fat, low sodium, healthy meal with tons of taste. Plus, it was FAST!

One thing: most canned refried beans smell a little like…well…dog food. Don’t worry, just proceed, it’s going to taste great. That being said, home-made is fast, easy, and cheap (tastes even better and smells yummy).

Simply spread the beans (and whatever else you want inside) on the tortilla, roll it up, spritz them with a little spray oil, and grill. We used a stove top griddle, but you could easily spray a little oil on a cookie sheet and bake them in the oven at 350F – 400F, turning a few times until crispy and hot. On the griddle, use a frying pan to press them down, panini-style, and get these awesome grill marks and nicely crunchy.

Top them with salsa, guacamole, vegan sour cream, and maybe some cilantro – whatever is available. Fast, cheap, and a hit with everyone!

  1. Needed to amend my earlier comment. I meant the vegan refried beans, not burritos. So sorry. My bad.

      That sounds really delicious, though. We are usually interested in making fairly (or even, very) low fat preparations. But this idea sounds like something to try. Thanks! – Greg

To make Vegan burritos taste better, fry up vegan bacon in a little bit of oil in a pan first. then to this pan add Earth Balance butter, vegan cheese, and a little bit of unsweetened cashew milk. stir all together until the cheese has melted. this is the way that we make them at home. I hope this is useful and let you all like it.

    1. We love it too. Tostadas are another favorite (we even made a video for our channel https://youtu.be/RUqHZiRQwlo). This one is fun and really fast to bring to the table. We often have previously made refried beans (from dry bulk, usually) in the freezer so its a quick thaw, first. But refried beans are on regular rotation here (surprised?) so we can make them in a jiffy. But we wanted to give it a go with completely store bought since a lot of people could be intimidated by whipping it all up from scratch.
