Can’t Stop Eating This Bean Dip

The first time I had this bean dip, I was at work. My friend Whitney brought it with a bag of corn chips. I couldn’t stay out of it and when the chips were gone, I was eating it out of a paper cup with a spoon. It is possible that it is mildly addictive.

Whitney is not a vegan. She did not bring it to accommodate vegans. She brought it because it is good. This is a great example of all the wonderful vegan friendly foods that you can easily bring to a party or gathering. Everyone can enjoy it. You know there is something you can eat and share and it might be an opening for discussing your choice to be a vegan in a very nonthreatening and delicious way.

We have made it several times and found that having it on hand to add to salads, have on a big bed of greens or eat as a side dish with lunch is really great too.

Description

Delicious bean dip that everyone will love, whether vegan, paleo, or whatever. It is a wonderful Go-To item for that vegan dish you want to bring to a gathering. You could eat only this and be perfectly happy.


Ingredients

Units Scale
  • 3/4 cup sugar or 1/2 cup agave syrup
  • 3/4 cup apple cider vinegar
  • 1/2 cup sunflower oil
  • 1 lrg can black beans (or 2 15oz cans)
  • 1 15 oz can black-eyed peas
  • 1 can shopeg corn
  • 2 ribs celery, finely diced
  • 1 small red onion, finely diced
  • 1 small jar roasted red peppers, drained and finely diced

Instructions

  1. Heat vinegar with sugar until dissolved.
  2. Rinse and drain beans and peas.
  3. Mix everything together and let flavors meld together for several hours or overnight.
  4. Serve and enjoy!

Notes

By the way: Shopeg corn was something I never even heard of before making this. It is worth finding in the canned vegetable aisle.

We like scooping it up on cucumber slices (see the photo) but chips are just fine too. It also pairs well with salad greens for a hearty salad.

Our awesome friends at My Wife Makes also used this dip in a wrap which we think is a fantastic idea! So, have fun and use your imagination!

      Oh, absolutely! We just made it this week (twice!) and avocado is exactly what we used, since we didn’t have any sunflower oil in the house, and it was wonderful.

  1. This sounds a lot like Texas Caviar except for the dressing. I always add sweet peas to mine. can’t wait to try this. So excited to see your you tube channel and your website.       Texas Caviar? Now that is something that we have not heard of. Is that something that you make?

  2. My family is in love with this dip as well (although we keep trying to figure out something else to call besides a dip or salsa; neither seem right). I’ve been making it for about year. I also add a can of chickpeas to the mix–just makes more!
